Early that morning the cook enters the kitchen

is standing on end, the beets come up

for air, the nutmeg conjures its family

tree. They gather again in the first garden.

For her who calls them they perform

a poignant soufflé,

a salad as sly as the tree of knowledge,

an appetizer of planets in aspic rings.

O raiser of bread and spirits, O master magician,

how shall I command the apples to dance?

It is enough to love what can barely speak

and to praise their rinds, their longings, their passing savor.
